One Pot Pasta with Chicken, Spinach, Mushrooms, and Tomato

Season cubed chicken breast with salt and pepper.
Heat 1 tbsp of olive oil over medium high heat in a dutch oven or large pot. Add chicken to dutch oven and cook for about 8 minutes or until cooked through. Remove onto plate.
Heat the other tbsp of olive oil and add shallot and garlic and cook for 2 minutes.
Add mushrooms, tomatoes, Italian seasoning, paprika, garlic powder, red pepper flakes, and salt and pepper to taste. Stir and cook for a few minutes.
Add chicken broth and heavy cream and let it get to a boil. Once boiling, add uncooked pasta and cook until pasta is al dente.
Add back cubed chicken, spinach, and shredded cheese.
Serve immediately with grated parmesan cheese.
